Happy Pancake Day!

SOLD's Pancakes

Pancakes for Shrove Tuesday and any time – a breakfast treat. Give them a go, show us how you get on!

Makes: 10 pancakes

Preparation time: 10 minutes

Cooking time: 10 – 15 minutes

What do you need: Scales, Mixing Bowl, ladle, 2 x measuring jugs, balloon whisk, non-stick frying pan, small saucepan, tablespoon, teaspoon, fish slice (all not shown).

Ingredients

  • 200g self-raising flour *
  • Pinch of salt *
  • 1 ½ teaspoon baking powder *
  • 1 tablespoon caster sugar*
  • 3 large eggs
  • 200ml milk
  • 25g melted butter (milk) plus extra for cooking
  • Vegetable oil, for cooking

N.B. * These are all dry ingredients

Method

1. Wash your hands with warm soapy water and dry thoroughly.

2. Get all your equipment out and ready for use.

3. Prepare all your ingredients ready for use.

4. Mix 200g self-raising flour, 1 ½ tsp baking powder, 1 tbsp caster sugar and a pinch of salt together in a large bowl.

5. Create a well in the centre of the mixed dry ingredients.

6. Put the 25gms of butter in a saucepan and melt on a low heat. Add the wet ingredients into the bowl, 3 large eggs, 200ml milk and the melted butter.

7. Whisk together with either a balloon whisk or an electric hand beater until smooth. If it is easier, pour the mix into a jug.

8. Heat a knob of butter and 1 tsp of oil in a non-stick frying pan over a medium heat. When the butter looks frothy, pour in enough mixture to give you a 6-inch round of batter.

9. Cook the pancakes on one side for 1 to 2 minutes or until lots of tiny bubbles start to appear and pop on the surface.

Flip the pancakes over and cook for a further minute on the other side. Both sides should be evenly cooked and a golden-brown colour. Remove to a warmed plate and repeat until all the batter has gone.

To serve:

Place 2 pancakes on a plate and top with your choice of toppings, serve and eat immediately.

  • Chocolate drops, maple syrup and whipped cream
  • Vanilla ice cream, a sprinkle of cinnamon and sugar
  • Classic Lemon juice and granulated sugar
  • Bananas and maple syrup
  • Bananas and Nutella
  • Crispy smoked streaky bacon and maple syrup
